Reason for use
Aging meat in the freshness preservation machine
Though we are an Udon restaurant, we had been looking for devices for aging because are known for high quality meat. After searching a lot, we learned about Santetsu’s freshness preservation machine.
The machine can keep food fresh longer. General machines for food aging are available only for meat, but Santetsu’s unit can be used not only for meat but also for other food. So we became interested in their freshness preservation machine.
After renting one for a week
According to the explanation from Santetsu, the machine can keep food fresh twice as long as ordinary refrigerators. But we couldn’t believe that at first, so we decided to rent one for a week.
During the trial period, we put various foods in the unit experimentally, such as meat, vegetables, and lemons. The first thing that surprised us is how fresh the vegetables stayed in the machine. In an ordinary refrigerator, leafy greens in particular become dry and wilted quickly. However, the DEPAK freshness preservation machine kept them fresh without those happening.
Sliced meat also looked like it was being cut fresh without any discoloration.
Because we really realized the effect of DEPAK, we decided to install it.
Effects of DEPAK
It was right decision to use the freshness preservation machine
Currently, we use the machine mainly to keep meat fresh. Sliced meat that used to be discolored in about three days is not discolored or smelly even after a week. It is quite helpful for us.
I’m glad that it is useful not only for meat but also for various other food.
Because the DEPAK freshness preservation machine is placed where our customers can see it, we are glad to show the fresh meat in a good condition to the customers.
In addition, it is also a big advantage for restaurants to reduce food loss.

Incredible effect of freshness preservation
We actually tested how long food can be preserved in the unit.
Blocks of meat normally becomes smelly after 40 days, but it didn’t happen in DEPAK. We were curious to know how many days meat could last in DEPAK, so we left it for 80 days.
But no smell developed. We were worried about leaving it longer, so we ate it and it still looked fine.
Santetsu’s comment on this interview
I have never encounters an udon restaurant so committed to meat. There are many plaques for Kobe beef competitions in the restaurant. There are autographs and pictures of celebrities.
I ate Niku-udon (udon with beef). The noodles and soup as well as the meat were really delicious.
