Background
We considered installing a new refrigerator while renovating and refreshing the restaurant
When we preserved food in an ordinary refrigerator, we had difficulty ordering and managing food because the food went bad in two or three days.
So we were considering installing a new refrigerator while refreshing the restaurant.
We consulted with another company and they introduced Santetsu’s freshness preservation machine.
The main reason for installation
Though we were shown the DEPAK freshness preservation machine, it is more expensive than ordinary commercial refrigerators. So we asked them to look for a place where we can see it on site in our prefecture. Coincidentally, a restaurant that we do business with had installed it, so we went there to see it.
They said that it was quite helpful for keeping fish fresh and they had installed it every restaurant. Upon hearing that, we decided to install it.
Though it was expensive, we purchased it because we thought it could make a profit by reducing food waste.
The effect
We found it effective in keeping fish fresh. Firefly squid also kept its flavor without damage even four days after fishing. Though we use ingredients caught in our local area, we at times need to purchase the ingredients in advance because of the weather or market holidays.
In such cases, the DEPAK freshness preservation machine is quite useful in terms of work efficiency because it can keep ingredients for about a week that previously used to be damaged within a few days.

Japanese cuisine Kajisuke was established in 1963 and has been serviing Japanese cuisine including Kaiseki cuisine and Japanese crab for about 60 years in Komatsu city.
We offer local sake and seasonal dishes using local ingredients in Komatsu city, Ishikawa prefecture. We hope various people such as families and business people can enjoy our dishes and sake on special or important occasions.
