Thawing octopus

Previously, frozen octopus was steam-thawed in barrels the day before it was to be used and taken out early in the morning. The thawed octopus was transported by crane, which required space and was inefficient due to operating constraints.
When we built a new factory, we were looking for an easy-to-use thawing machine that could be placed in a limited space as the conventional thawing methods took up too much space.
We discovered Santatesu Engineering at a trade show and asked for demonstration.

During the demonstration, the octopus umami remained strong and was well received in the company. We cannot tell a clear difference because it was comparison with thawing under running water, but we felt there was smaller amount of drip loss.

At the demonstration, we put a 15kg block of octopus in the machine. The thawing machine was able to thaw the block right down to the center, so we felt it was easy to move on to the next process. It was also attractive to be able to thaw foods other than octopus at the same time. We compared it to other companies’ thawing machines, but there were many disadvantages such as the fact that tips of octopus tentacles were slightly cooked because of the uneven thickness, and the electricity bill was high. We decided to go with SANTETSU.
